Raw cacao powder is produced during the final stage of the cacao process. Once cacao paste has been pressed to remove all of the fat (cacao butter), what is left is cacao mass, which is then ground into cacao powder. Cacao powder can be used in place of unsweetened cocoa powder in baking, beverages, smoothies and any other recipes that call for cocoa powder. Since it is in its raw form, it has a much higher nutrient and anti-oxidant content than conventional cocoa powder. (More Info)
