It’s actually a fairly interesting distinction. We are all aware that when fresh produce is picked before it is fully ripe it is not as fresh or sweet in many cases as it is when it is ripened.
Well, the same holds true for olives, and fruit like mango whose color changes as it ripens. Green olives are picked before they are fully ripe, which is why they possess a firmer texture that some people love so much. They are also not as sweet as ripe olives, but olives in their natural state are not sweet at all. It is the curing process that determines which flavors are added and accentuated.
