Cacao butter is formed during one step in the process on the way to making cacao powder and eventually chocolate. Once the cacao seeds are fermented, dried, hulled and crushed, and finally ground into a thick paste. This paste is then mechanically pressed and the cacao butter is separated from the paste. It is basically an off-white fat that has many uses. As most of the nutritional benefits are in the non-fat parts of the cacao seeds, Cacao butter is not high in nutrients. Cacao butter is used to make all types of chocolate – white chocolate, milk chocolate and dark chocolate. It is also used extensively in beauty care products as it stays solid at room temperature and is easily absorbed by the skin.
